From Henderson to the Glass-Fronted Still House
Caol Ila distillery (pronounced «cull-eela») was founded in 1846 by Hector Henderson on the north-eastern shore of the Isle of Islay, by the Sound of Islay — Caol Ila in Scots Gaelic means «the Sound of Islay». The distillery is situated in a small sheltered bay looking across to the Isle of Jura and its distinctive Paps — three characteristic mountain peaks.
Over the 19th and 20th centuries the distillery changed hands several times until it eventually became part of the giant DCL (now Diageo). In 1972 a radical transformation took place: the old buildings were demolished to the ground and replaced by a modern distillery with characteristic glass-fronted still house walls opening onto the Sound. It is one of the most recognisable industrial vistas in Scottish whisky.
Today Caol Ila is the largest whisky producer on Islay. The overwhelming majority of its output has historically gone into blends for Johnnie Walker and Bell's, which kept the distillery in the shadow of its more prominent neighbours for many years. It was only with the growth of interest in Single Malt in the 2000s that Caol Ila gained its well-deserved recognition as an independent brand.
The Paradox of Transparent Smoke
Caol Ila's central paradox is high PPM combined with a light, almost airy style. The explanation lies in the design of the stills. Caol Ila uses very tall stills with pronounced reflux: heavier spirit molecules cannot rise to the «lyne arm» and fall back, while only the lightest and cleanest fractions pass over. This is what creates the characteristic «transparency» despite the peated base.
The result is that the peat is perceived not as heavy medicinal iodine (as with Ardbeg or Lagavulin), but as a light, mentholated, almost refreshing smoke. Citrus notes (lime, green pepper), a sea breeze and minerality complete the picture. Some tasters describe the aroma as «smoky lime cordial».
The distillery also releases rare unpeated versions — a series that allows comparison of the distillery's style without the influence of peat. This is an educational product for understanding precisely how still design influences flavour independently of PPM.
